I’m a baker from Dublin Ireland living in Denmark.
Baking is my passion. I see it as a way to express myself. If I don’t bake something at least once or twice a week I’ll lose my mind
I also like to teach and have a bit of craic aswell. “Craic” is an Irish term for fun by the way. Just so we’re clear 😅

SIMPLE WHITE ICING ☘️ This is the icing I used on the cinnamon bread yesterday. I used milk but you can use water too if you prefer that Just add milk a drop at a time until you get a thickish consistency. You don’t want it to be too thin. Yes just add 2 tbsps of vinegar or lemon juice to it. Stir and let it stand for about 10 minutes before adding it. You’ll need an acid to activate the soda ☘️

I cracked 3 eggs and weighed them from our last conversation and they ranged from 47 grams to 52 grams. I live along the western side of Lake Michigan and the retailer here sold them as large eggs? Anyway, I was thinking about that earlier comment... Were yours called large too? I just kind of find it interesting if there are any differences in sizing here or there.
What I mentioned was the weight of the eggs uncracked. Here in Denmark they’re labeled M/L Medium/Large and they weigh around 53-72g In saying that they vary ☘️

I've just discovered soda bread and can't believe how easy it is. I've made yeast bread for years but that now seems too cumbersome compared to this. Made my first loaf last night and it's delicious. We had a slice this morning before a 30 mile bike ride and then french toast and eggs with it for lunch! Still some left over for butter and honey tonight. Your videos are enjoyable. Thanks!

You lost me with the chocolate chips. They are never great chocolate and now most companies make them hard waxy and cheap. Back in the day estles actually made a decent product. If you must Ad chunks of hard chocolate(after they cool” use left over candy from Christmas or Easter. Call dad hard solid pieces of maids in the box. But really why would you want to ruin the texture of a soft muffin. I may try this recipe leaving out those waxy chocolate chips. Yes you could buy expensive French or Swiss chocolate but that would defeat the point. The only thing chocolate chips work in chocolate chip cookies and you’re better to buy a block of your own chocolate remaking them and break it up into unusual pieces. This is a picture of killer bugaboo mine and it grows worse each year as well these so-called chocolate companies continue to turn out cheaper and cheaper imitations of what was every day good chocolate Yeah I have had my rent so let’s get back to the handsome chef doing the cooking. Or I should say handsome Baker.
